How To Make Healthy Shakshuka

Serves:

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1 can (400g) crushed tomatoes
  • Salt and pepper, to taste
  • 4-6 large eggs
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper, sauté until softened.

  2. Add garlic, cumin, paprika, and chili powder. Cook for 1-2 minutes until fragrant.

  3. Pour in crushed tomatoes and season with salt and pepper. Simmer for 10-15 minutes, until the sauce thickens.

  4. Create small wells in the sauce and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, until the eggs are cooked to your liking.

  5. Remove from heat and garnish with fresh parsley. Serve hot with crusty bread or pita.
