Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 cup coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon curry powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 2 cloves garlic, minced
  • 1 tablespoon fresh coriander, chopped
  • 1 tablespoon vegetable oil
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine coconut milk, lime juice, curry powder, ground coriander, cumin, turmeric, chili powder, minced garlic, chopped coriander, vegetable oil, salt, and pepper. Mix well to create the marinade.

  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour, or overnight for best results.

  3. Preheat the grill or grill pan over medium-high heat. Remove the chicken from the marinade and shake off any excess.

  4. Grill the chicken breasts for about 6-8 minutes per side, or until cooked through and no longer pink in the center. Baste the chicken with the remaining marinade while grilling.

  5. Remove the chicken from the grill and let it rest for a few minutes before serving. Garnish with fresh coriander and lime wedges, if desired.

  6. Serve the spiced coconut chicken with coriander and lime alongside steamed rice or naan bread.
