How To Make Baked Coconut Lime Chicken Recipe
Tender chicken marinated in coconut milk, lime, and spices and baked to perfection.

Ingredients
- 4 chicken breasts
- 1/2 cup coconut milk
- 2 limes, juiced and zested
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp coriander
- 1/2 tsp cumin
- 1/4 tsp red pepper flakes
- Salt and pepper, to taste
- Fresh cilantro, chopped (optional)
Instructions

In a small bowl, whisk together coconut milk, lime juice and zest, garlic, soy sauce, honey, coriander, cumin, red pepper flakes, salt and pepper to make the marinade.

Place chicken breasts in a large ziplock bag and pour marinade on top. Seal the bag and shake to evenly coat the chicken. Marinate in the fridge for at least an hour (or overnight).

Preheat oven to 375°F (190°C).

Place the chicken and marinade in a baking dish. Bake for 20-25 minutes, or until fully cooked (internal temperature should reach 165°F or 75°C).

Garnish with fresh cilantro (optional) and serve with your favorite sides.
