  • 2 cups shredded cooked chicken
  • 1 cup chopped lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 1/4 cup sliced red onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced almonds
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, lettuce, tomatoes, cucumber, red onions, cilantro, and sliced almonds.

  2. In a smaller bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the salad and toss until well coated.

  4. Serve chilled and enjoy!
