Ingredients

  • 4 chicken breasts, cut into bite-sized pieces
  • 1/2 cup peanut butter
  • 4 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/4 cup coconut milk
  • 1 tablespoon vegetable oil
  • Skewers, soaked in water

Instructions

  1. In a bowl, mix together peanut butter, soy sauce, honey, garlic, ginger, lime juice, chili powder, and coconut milk.

  2. Add chicken pieces to the marinade and coat well. Let it marinate for at least 1 hour or overnight in the refrigerator.

  3. Preheat the grill to medium-high heat.

  4. Thread the marinated chicken pieces onto the soaked skewers.

  5. Brush the grill grates with vegetable oil to prevent sticking.

  6. Grill the chicken skewers for about 10 minutes on each side, or until cooked through and nicely charred.

  7. Serve hot with your favorite dipping sauce or over steamed rice.
