Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp miso paste
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 4 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1 cup baby spinach
  • 1/4 cup cilantro, chopped
  • 1/4 cup green onions, sliced (for garnish)

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, green onions, garlic, miso paste, soy sauce, and sesame oil. Mix until well combined.

  2. Roll the mixture into small meatballs, about 1 inch in diameter.

  3. In a large pot, bring chicken broth to a boil. Add the meatballs and mushrooms. Reduce heat and simmer for 15 minutes, until meatballs are cooked through.

  4. Add baby spinach and cook for an additional 2 minutes, until wilted.

  5. Serve the meatballs and broth in bowls, garnished with cilantro and sliced green onions.
