How To Make Miso Chicken Meatballs in Broth

Ingredients
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup green onions, finely chopped
- 2 cloves garlic, minced
- 1 tbsp miso paste
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 4 cups chicken broth
- 1 cup mushrooms, sliced
- 1 cup baby spinach
- 1/4 cup cilantro, chopped
- 1/4 cup green onions, sliced (for garnish)
Instructions

In a large bowl, combine ground chicken, breadcrumbs, green onions, garlic, miso paste, soy sauce, and sesame oil. Mix until well combined.

Roll the mixture into small meatballs, about 1 inch in diameter.

In a large pot, bring chicken broth to a boil. Add the meatballs and mushrooms. Reduce heat and simmer for 15 minutes, until meatballs are cooked through.

Add baby spinach and cook for an additional 2 minutes, until wilted.

Serve the meatballs and broth in bowls, garnished with cilantro and sliced green onions.
