How To Make Pulled Chicken with Charred-Lime Guac & Crispy Skin

Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- Salt and pepper, to taste
- 2 limes, halved
- 2 ripe avocados
- 1 small red onion, finely diced
- 1 jalapeno, seeds and ribs removed, finely diced
- 1/4 cup chopped cilantro
- Tortillas, for serving
Instructions

Preheat your grill or smoker to 250°F (120°C). Season the chicken thighs with smoked paprika, garlic powder, onion powder, cumin, salt, and pepper.

Place the chicken thighs skin side up on the grill or smoker. Close the lid and cook for 3-4 hours, or until the internal temperature reaches 165°F (74°C).

While the chicken is cooking, preheat a grill pan over high heat. Place the lime halves cut side down on the grill pan and cook until charred, about 2-3 minutes.

In a bowl, mash the avocado with the juice of the charred limes. Stir in the diced red onion, jalapeno, and chopped cilantro. Season with salt and pepper to taste.

Remove the chicken from the grill or smoker and let it rest for 10 minutes. Remove the skin from the chicken thighs and set aside.

Use two forks to shred the chicken meat.

Serve the pulled chicken on tortillas, topped with the charred-lime guacamole and crispy chicken skin.
