How To Make Pulled Chicken & Black Bean Chilli

Ingredients
- 2 cups pulled chicken
- 1 can black beans, drained and rinsed
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 jalapeno, seeded and finely chopped
- 1 can diced tomatoes
- 2 cups chicken broth
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- Salt, to taste
- Pepper, to taste
- Olive oil, for cooking
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions

Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, minced garlic, bell pepper, and jalapeno. Cook until softened, about 5 minutes.

Add the pulled chicken to the pot and season with chili powder, cumin, paprika, salt, and pepper. Stir to coat the chicken with the spices.

Pour in the diced tomatoes, black beans, and chicken broth. Bring to a boil, then reduce heat to low and simmer for 1 hour, stirring occasionally.

After 1 hour, remove the lid and continue to simmer for another 30 minutes, allowing the chili to thicken.

Serve hot, topped with shredded cheese, sour cream, and chopped cilantro if desired.
