Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup prepared pesto

Instructions

  1. Season the chicken breasts with salt and pepper.

  2. Heat olive oil in a large skillet over medium heat.

  3. Add the chicken breasts and cook for 6-8 minutes on each side, until browned and cooked through.

  4. Remove the chicken from the skillet and set aside.

  5. In the same skillet, add the chicken broth and bring to a boil.

  6. Reduce heat to low and stir in the heavy cream, Parmesan cheese, and pesto.

  7. Cook for 2-3 minutes, until the sauce has thickened.

  8. Return the chicken to the skillet and toss to coat in the sauce.

  9. Cook for an additional 2-3 minutes, until the chicken is heated through.

  10. Serve the creamy pesto chicken with your choice of sides.
