How To Make Chicken Fricassee

Ingredients
- 4 chicken thighs
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 carrot, diced
- 1 celery stalk, diced
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 sprig fresh thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions

Season the chicken thighs with salt and pepper. Heat the olive oil in a large skillet over medium heat and sear the chicken on both sides until golden brown. Remove the chicken from the skillet and set aside.

In the same skillet, add the onion, garlic, mushrooms, carrot, and celery. Cook for about 5 minutes until the vegetables are softened.

Sprinkle the flour over the vegetables and stir to coat. Cook for another minute.

Slowly whisk in the chicken broth and bring to a simmer. Return the chicken to the skillet and add the thyme sprig. Cover and simmer for 30 minutes until the chicken is cooked through and tender.

Remove the chicken from the skillet and set aside. Discard the thyme sprig.

Increase the heat to medium-high and stir in the heavy cream. Cook for about 5 minutes until the sauce has thickened.

Return the chicken to the skillet and heat through. Season with salt and pepper to taste.

Serve the chicken fricassee hot, garnished with chopped parsley.
