Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms
  • 1/2 cup diced onion
  • 1 clove minced garlic
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded Swiss cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.

  2. In a skillet, heat olive oil over medium heat.

  3. Add mushrooms, onion, garlic, thyme, salt, and pepper. Cook until the mushrooms have released their liquid and the onions are translucent, about 5-7 minutes.

  4. Slice a pocket into each chicken breast. Stuff each pocket with the mushroom mixture and 2 tbsp of shredded Swiss cheese.

  5. Heat the same skillet over medium-high heat. Add stuffed chicken breasts and cook until browned on each side, about 4-5 minutes.

  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through.

  7. Let the chicken rest for 5 minutes before cutting and serving.
