How To Make Andouille Sausage and Mushroom Stuffed Chicken Recipe

Tender chicken breasts filled with spicy Andouille sausage and mushrooms. A perfect dinner for four!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 oz Andouille sausage, diced
  • 1 cup mushrooms, sliced
  • 1/2 cup breadcrumbs
  • 1/4 cup parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.

  2. In a skillet over medium heat, cook Andouille sausage until browned.

  3. Add mushrooms and garlic to the skillet and cook until tender.

  4. In a mixing bowl, combine breadcrumbs and parmesan cheese.

  5. Add sausage and mushroom mixture to the mixing bowl and stir to combine.

  6. Cut a pocket into each chicken breast and stuff with the sausage and mushroom mixture.

  7. Season chicken breasts with salt and pepper and place in a baking dish.

  8. Drizzle olive oil over the chicken and bake for 35-40 minutes, until chicken is cooked through.

  9. Let chicken rest for 5 minutes before serving.
