  • 1 lb chicken breast, cut into small pieces
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a shallow bowl, mix together the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.

  3. Dip each chicken piece into the beaten eggs, then coat it in the breadcrumb mixture, pressing gently to adhere.

  4. Place the coated chicken poppers on the prepared baking sheet and lightly spray with cooking spray.

  5. Bake for 15-20 minutes or until the chicken is cooked through and the coating is golden and crispy.
