Serves:
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1/2 tsp ginger
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp cornstarch
- 2 tbsp water
- 1/4 cup chopped green onions (for garnish)
- Cooked white rice (optional)
Instructions
-
In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic, ginger, and red pepper flakes (if using).
-
Place chicken breasts in a zip-top bag and pour half of the marinade over them. Reserve the remaining half for later. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.
-
Preheat grill to medium heat. Remove chicken from the marinade and discard the marinade.
-
Grill the chicken for 6-8 minutes per side, or until cooked through and juices run clear. Alternatively, you can cook the chicken on a stovetop grill pan or in an oven preheated to 375°F (190°C) for about 20 minutes.
-
While the chicken is cooking, transfer the reserved marinade to a saucepan. In a small bowl, whisk together cornstarch and water until smooth. Stir the cornstarch mixture into the saucepan with the marinade.
-
Bring the marinade to a boil over medium heat, stirring constantly, until thickened. Remove from heat.
-
Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
-
Serve the sliced chicken over cooked white rice (if desired) and drizzle the thickened marinade sauce on top. Garnish with chopped green onions.
