  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1/2 tsp ginger
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1/4 cup chopped green onions (for garnish)
  • Cooked white rice (optional)

Instructions

  1. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic, ginger, and red pepper flakes (if using).

  2. Place chicken breasts in a zip-top bag and pour half of the marinade over them. Reserve the remaining half for later. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.

  3. Preheat grill to medium heat. Remove chicken from the marinade and discard the marinade.

  4. Grill the chicken for 6-8 minutes per side, or until cooked through and juices run clear. Alternatively, you can cook the chicken on a stovetop grill pan or in an oven preheated to 375°F (190°C) for about 20 minutes.

  5. While the chicken is cooking, transfer the reserved marinade to a saucepan. In a small bowl, whisk together cornstarch and water until smooth. Stir the cornstarch mixture into the saucepan with the marinade.

  6. Bring the marinade to a boil over medium heat, stirring constantly, until thickened. Remove from heat.

  7. Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.

  8. Serve the sliced chicken over cooked white rice (if desired) and drizzle the thickened marinade sauce on top. Garnish with chopped green onions.
