Ingredients

  • 2 chicken breasts, sliced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 cups mixed veggies (such as bell peppers, broccoli, and carrots), chopped
  • 1 cup cooked quinoa or rice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • Sesame seeds, for garnish
  • Green onions, for garnish

Instructions

  1. In a bowl, season the sliced chicken with garlic powder, paprika, salt, and pepper.

  2. Heat olive oil in a skillet over medium heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

  3. In the same skillet, add the chopped veggies and sauté until tender, about 5 minutes.

  4. In a small bowl, mix together soy sauce, honey, and sesame oil. Pour the sauce over the veggies and stir to combine.

  5. Add the cooked chicken back to the skillet and cook for an additional 2-3 minutes, until everything is heated through.

  6. Divide cooked quinoa or rice among 4 bowls. Top with the chicken and veggie mixture.

  7. Garnish with sesame seeds and green onions.

  8. Serve hot and enjoy!
