Ingredients

  • 2 chicken breasts, thinly sliced
  • 1 mango, peeled and diced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 tsp of ginger, grated
  • 2 tbsp of soy sauce
  • 1 tbsp of honey
  • 1 tbsp of sesame oil
  • Salt and pepper to taste
  • 2 tbsp of vegetable oil
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large skillet or wok, heat vegetable oil over high heat.

  2. Add chicken slices and cook until browned and cooked through, about 3-4 minutes. Remove from skillet and set aside.

  3. In the same skillet, add onion, garlic, and ginger. Saute for 2 minutes until fragrant.

  4. Add red bell pepper and mango to the skillet and cook for another 2 minutes until slightly softened.

  5. In a small bowl, whisk together soy sauce, honey, and sesame oil. Pour the sauce over the skillet ingredients and stir well to coat.

  6. Return the cooked chicken to the skillet and toss everything together until evenly coated with the sauce.

  7. Season with salt and pepper to taste.

  8. Cook for an additional 1-2 minutes until everything is heated through.

  9. Remove from heat and garnish with sliced green onions.

  10. Serve hot with steamed rice or noodles.
