How To Make Veronica’s Apple Pancakes

No breakfast is complete without hot stacks of delicious pancakes! You may not be a morning person now, but with our yummy pancake recipes you certainly will be! Serves:

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 2 apples, peeled, cored, and diced

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.

  2. In a separate bowl, whisk together buttermilk, eggs, and melted butter.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Gently fold in the diced apples.

  5. Heat a large non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.

  6. Drop 1/4 cup portions of batter onto the skillet and spread slightly with the back of a spoon.

  7. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

  8. Serve warm with maple syrup and enjoy!
