How To Make Veronica’s Apple Pancakes
No breakfast is complete without hot stacks of delicious pancakes! You may not be a morning person now, but with our yummy pancake recipes you certainly will be! Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups buttermilk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 2 apples, peeled, cored, and diced
Instructions

In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.

In a separate bowl, whisk together buttermilk, eggs, and melted butter.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Gently fold in the diced apples.

Heat a large non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.

Drop 1/4 cup portions of batter onto the skillet and spread slightly with the back of a spoon.

Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

Serve warm with maple syrup and enjoy!
