Ingredients
- 8 corn tortillas
- 2 chicken breasts, cooked and shredded
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup chopped cilantro
- 1/4 cup sour cream
- Salt and pepper, to taste
Instructions

Preheat the oven to 350°F (180°C).

In a skillet, sauté the onion and garlic until translucent.

Add the shredded chicken to the skillet and season with salt and pepper. Cook for 5 minutes.

Warm the tortillas in a dry skillet or over an open flame until pliable.

Pour a thin layer of enchilada sauce into a baking dish.

Dip each tortilla in the sauce to coat, then fill with the chicken mixture, roll tightly, and place seam-side down in the baking dish.

Pour the remaining sauce over the enchiladas and sprinkle with shredded cheese.

Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
