- 1/4 tsp salt
- 1 1/4 cups buttermilk
- 1/2 tsp vanilla extract
- 1 egg
- 2 tbsp melted butter
Instructions

In a large mixing bowl, whisk together the spelt flour, sugar, baking powder, baking soda, and salt.
-
In a separate bowl, whisk together the buttermilk, vanilla extract, egg, and melted butter.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.

Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter or cooking spray.

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
-
Repeat with the remaining batter.
-
Serve the spelt pancakes warm with your favorite toppings such as maple syrup, fresh berries, or yogurt.
