Ingredients

  • 1 cup Acini de Pepe pasta
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 3/4 cups pineapple juice
  • 2 large eggs, beaten
  • 1 tablespoon lemon juice
  • 1 (11-ounce) can mandarin oranges, drained
  • 1 (20-ounce) can pineapple chunks, drained
  • 1 (8-ounce) can crushed pineapple, drained
  • 1 cup mini marshmallows
  • 1 cup sweetened shredded coconut
  • 1 cup whipped topping

Instructions

  1. Cook the Acini de Pepe pasta according to package instructions. Drain and rinse with cold water.

  2. In a saucepan, whisk together the sugar, flour, and salt. Gradually whisk in the pineapple juice and eggs until smooth. Cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in the lemon juice. Let the custard cool completely.

  3. In a large mixing bowl, combine the cooked pasta, custard, mandarin oranges, pineapple chunks, crushed pineapple, marshmallows, coconut, and whipped topping. Gently toss until well combined.

  4. Cover and refrigerate for at least 2 hours before serving.
