How To Make Apricot Pancakes with Honey Butter

Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/4 cup apricot jam
  • 1 large egg
  • 2 tbsp melted butter
  • 1/2 cup dried apricots, chopped
  • Butter or oil for cooking
  • honey butter:
  • 1/2 cup unsalted butter, softened
  • 2 tbsp honey
  • Pinch of salt

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

  2. In a separate bowl, whisk together the buttermilk, apricot jam, egg, and melted butter.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped dried apricots.

  4. Heat a large non-stick skillet or griddle over medium heat and grease with butter or oil.

  5. Drop 1/4 cup portions of batter onto the skillet and cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for an additional 1-2 minutes, until golden brown.

  6. Transfer the cooked pancakes to a plate and cover with a towel to keep warm. Repeat with the remaining batter.

  7. For the honey butter, combine the softened butter, honey, and salt in a small bowl. Mix until well combined.

  8. Serve the apricot pancakes warm with a dollop of honey butter on top.
