- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 1/2 cup milk
- 1/4 cup Pimm’s
- 1/2 cup diced strawberries
- 1/4 cup diced cucumber
- 1/4 cup chopped fresh mint
- 1/4 cup whipped cream, for serving
Instructions
-
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
-
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
-
Add the cold butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
-
In a separate bowl, combine the milk and Pimm’s. Pour the wet ingredients into the dry ingredients and mix until just combined.
-
Gently fold in the diced strawberries, cucumber, and chopped mint.
-
Turn the dough out onto a floured surface and knead it a few times until it comes together. Pat the dough into a 1-inch thick circle.
-
Use a biscuit cutter to cut out scones from the dough and place them onto the prepared baking sheet.
-
Bake for 12-15 minutes, or until the scones are golden brown.
-
Allow the scones to cool slightly before serving. Serve with whipped cream and enjoy!
