Preparation: 20 minutes
Cooking: 15 minutes
Total: 35 minutes

Serves:

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/2 cup milk
  • 1/4 cup Pimm’s
  • 1/2 cup diced strawberries
  • 1/4 cup diced cucumber
  • 1/4 cup chopped fresh mint
  • 1/4 cup whipped cream, for serving

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

  3. Add the cold butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.

  4. In a separate bowl, combine the milk and Pimm’s. Pour the wet ingredients into the dry ingredients and mix until just combined.

  5. Gently fold in the diced strawberries, cucumber, and chopped mint.

  6. Turn the dough out onto a floured surface and knead it a few times until it comes together. Pat the dough into a 1-inch thick circle.

  7. Use a biscuit cutter to cut out scones from the dough and place them onto the prepared baking sheet.

  8. Bake for 12-15 minutes, or until the scones are golden brown.

  9. Allow the scones to cool slightly before serving. Serve with whipped cream and enjoy!
