How To Make Fluffy American Pancakes with Cherry Berry Syrup

Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 1/2 cups milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup cherries, pitted and halved
- 1 cup mixed berries (such as blueberries, raspberries, and strawberries)
- 1/4 cup maple syrup
- Powdered sugar, for dusting (optional)
Instructions

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, beat the eggs. Then, add the milk, melted butter, and vanilla extract. Mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix, a few lumps are okay.

Heat a non-stick skillet or griddle over medium heat. Grease with butter or cooking spray.

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.

In a small saucepan, combine the cherries, mixed berries, and maple syrup. Cook over medium heat until the berries soften and release their juices, about 5 minutes.

Serve the pancakes with a generous drizzle of the cherry-berry syrup. Dust with powdered sugar if desired.
