  • 4 Andouille sausages, sliced
  • 4 medium-sized potatoes, chopped into small pieces
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.

  2. Add sliced Andouille sausage and cook for 5-7 minutes until browned.

  3. Add chopped potatoes and cook until crispy and golden brown, stirring occasionally.

  4. Add chopped red bell pepper, onion, garlic, and thyme. Cook for another 5 minutes, until vegetables are tender.

  5. Season with salt and pepper to taste.

  6. Garnish with chopped parsley and serve hot.
