Serves:
Ingredients
- 6 strips of bacon, chopped
- 1 small onion, diced
- 1 red bell pepper, diced
- 6 medium sausages, sliced
- 1 cup mushrooms, sliced
- 8 large eggs
- Salt and pepper to taste
- 1 cup cooked beans
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 cup grated Cheddar cheese
- Fresh parsley, chopped (for garnish)
Instructions
-
Preheat the oven to 180°C (350°F).
-
In a large oven-safe skillet, cook the bacon over medium heat until crispy. Remove bacon from the pan and set aside, leaving the bacon grease in the skillet.
-
Add the onion and red bell pepper to the skillet and cook until softened, about 5 minutes.
-
Add the sliced sausages and mushrooms to the skillet and cook for another 5 minutes.
-
In a separate bowl, whisk the eggs together with salt and pepper.
-
Pour the beaten eggs into the skillet with the cooked ingredients. Stir gently to distribute the ingredients evenly.
-
Transfer the skillet to the preheated oven and bake for 20 minutes, until the eggs are set and lightly golden.
-
While the frittata is baking, prepare the smoky beans. In a saucepan, combine the cooked beans, tomato paste, Worcestershire sauce, smoked paprika, and cayenne pepper. Cook over medium heat until heated through.
-
Remove the frittata from the oven and sprinkle the grated Cheddar cheese on top. Return to the oven for another 5 minutes, until the cheese has melted and bubbly.
-
Serve the frittata hot, topped with the smoky beans and crispy bacon. Garnish with chopped fresh parsley.
