How To Make Full English Frittata with Smoky Beans

  • 6 strips of bacon, chopped
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 6 medium sausages, sliced
  • 1 cup mushrooms, sliced
  • 8 large eggs
  • Salt and pepper to taste
  • 1 cup cooked beans
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 cup grated Cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large oven-safe skillet, cook the bacon over medium heat until crispy. Remove bacon from the pan and set aside, leaving the bacon grease in the skillet.

  3. Add the onion and red bell pepper to the skillet and cook until softened, about 5 minutes.

  4. Add the sliced sausages and mushrooms to the skillet and cook for another 5 minutes.

  5. In a separate bowl, whisk the eggs together with salt and pepper.

  6. Pour the beaten eggs into the skillet with the cooked ingredients. Stir gently to distribute the ingredients evenly.

  7. Transfer the skillet to the preheated oven and bake for 20 minutes, until the eggs are set and lightly golden.

  8. While the frittata is baking, prepare the smoky beans. In a saucepan, combine the cooked beans, tomato paste, Worcestershire sauce, smoked paprika, and cayenne pepper. Cook over medium heat until heated through.

  9. Remove the frittata from the oven and sprinkle the grated Cheddar cheese on top. Return to the oven for another 5 minutes, until the cheese has melted and bubbly.

  10. Serve the frittata hot, topped with the smoky beans and crispy bacon. Garnish with chopped fresh parsley.
