  • 2 cups shredded zucchini
  • 1 cup crushed pineapple, drained
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.

  2. In a large bowl, combine the shredded zucchini, crushed pineapple, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Mix well.

  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  4. Gradually add the dry ingredients to the zucchini mixture, mixing until just combined.

  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  6. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
