Ingredients

  • 4 slices of bread
  • 2 eggs
  • 1/2 cup of coconut milk
  • 1/4 cup of shredded coconut
  • 1/4 tsp of cinnamon
  • 1/4 tsp of nutmeg
  • 1/4 tsp of vanilla extract
  • 1/4 tsp of salt
  • 2 tbsp of butter
  • 1 ripe pineapple, peeled and sliced
  • 1 tbsp of honey
  • 1/4 tsp of chili powder

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a shallow bowl, whisk together the eggs, coconut milk, shredded coconut, cinnamon, nutmeg, vanilla extract, and salt.

  3. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.

  4. Heat a tablespoon of butter in a skillet over medium heat. Cook the soaked bread slices for 2-3 minutes on each side until golden brown. Repeat with the remaining bread slices.

  5. Place the pineapple slices on a baking sheet lined with parchment paper. Drizzle with honey and sprinkle with chili powder.

  6. Roast the pineapple in the preheated oven for 10-15 minutes until slightly caramelized.

  7. Serve the coconut french toast with the spiced roasted pineapple on top.

  8. Optional: sprinkle with additional shredded coconut and drizzle with maple syrup.
