Ingredients

  • 2 ripe mangoes, mashed
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 2 eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • ¼ cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.

  2. In a large bowl, combine the flour, baking powder, and baking soda.

  3. In a separate bowl, mix the melted butter, sugar, eggs, mangoes, milk, and vanilla extract until well combined.

  4. Gradually add the wet mixture to the dry ingredients and mix until just combined. Do not overmix.

  5. Fold in the chopped walnuts, if desired.

  6. Pour the batter into the prepared loaf pan and smooth the top.

  7. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
