Ingredients

  • 1 lb beef flank steak
  • 1/4 cup sour orange juice
  • 4 cloves garlic, minced
  • 2 tsp salt
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions

  1. Place the beef flank steak in a large pot and cover with water. Bring to a boil over high heat. Reduce heat to low, cover, and simmer for 1 hour until the beef is tender.

  2. Remove the beef from the pot and let it cool slightly. Shred the beef using two forks, pulling apart into bite-sized pieces.

  3. In a bowl, combine sour orange juice, minced garlic, salt, cumin, and black pepper. Pour the marinade over the shredded beef and let it marinate for 15 minutes.

  4. Heat olive oil in a large skillet over medium-high heat. Add the sliced onion and sauté until softened and caramelized.

  5. Add the marinated shredded beef to the skillet and cook for 10-12 minutes, stirring occasionally, until crispy and browned.

  6. Sprinkle chopped cilantro over the beef and toss to combine. Serve the Vaca Frita with lime wedges on the side.
