How To Make Easy Potato Scones

Ingredients
- 2 large potatoes, peeled and grated
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons butter, melted
- 1/4 cup milk
- 1 tablespoon chopped fresh parsley (optional)
- Salt and pepper to taste
- Vegetable oil for frying
Instructions

Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

In a large bowl, combine the grated potatoes, flour, baking powder, and salt. Mix well.

Add the melted butter and milk to the potato mixture. Mix until a dough forms.

Turn the dough out onto a floured surface and knead gently for a minute.

Roll out the dough to about 1/4 inch thickness. Cut the dough into rounds or triangles.

Heat a generous amount of vegetable oil in a large skillet over medium heat.
