  • 2 large potatoes, peeled and grated
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted
  • 1/4 cup milk
  • 1 tablespoon chopped fresh parsley (optional)
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

  2. In a large bowl, combine the grated potatoes, flour, baking powder, and salt. Mix well.

  3. Add the melted butter and milk to the potato mixture. Mix until a dough forms.

  4. Turn the dough out onto a floured surface and knead gently for a minute.

  5. Roll out the dough to about 1/4 inch thickness. Cut the dough into rounds or triangles.

  6. Heat a generous amount of vegetable oil in a large skillet over medium heat.

  7. Cook the scones in batches until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

  8. Sprinkle with chopped fresh parsley, salt, and pepper if desired.

  9. Serve the potato scones warm as a side dish.
