How To Make Smoky Beef Stew

Ingredients
- 1.5 lb beef chuck, cut into cubes
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup red wine
- 1 cup beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions

Heat olive oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove from the pot and set aside.

In the same pot, add the chopped onion and minced garlic. Sauté until fragrant and translucent.

Add the diced carrots and celery and cook for another 5 minutes.

Pour in the red wine and deglaze the pot, scraping up any browned bits from the bottom.

Add the beef broth, diced tomatoes, tomato paste, smoked paprika, dried thyme, bay leaf, and the browned beef cubes. Season with salt and pepper to taste.

Bring the stew to a simmer, then reduce the heat to low and cover. Let it cook for 2 hours, stirring occasionally.

Remove the bay leaf before serving. Adjust the seasoning if needed.

Serve the smoky beef stew hot with crusty bread or mashed potatoes.
