Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • salt and pepper, to taste
  • optional toppings: shredded cheese, sour cream, sliced green onions

Instructions

  1. In a large pot or skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the onion, garlic, and bell pepper to the pot and cook until the vegetables are soft.

  3. Stir in the kidney beans, diced tomatoes, beef broth, chili powder, cumin, salt, and pepper.

  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.

  5. Serve hot, topped with your desired toppings.
