Ingredients

  • 1 can of black beans, drained and rinsed
  • 1 cup of frozen corn kernels
  • 1 jalapeno pepper, seeded and diced
  • 1/2 red onion, diced
  • 1/4 cup of diced tomatoes
  • 2 cloves of garlic, minced
  • 1/4 cup of chopped cilantro
  • 1 lime, juiced
  • 1 tsp of cumin powder
  • 1 tsp of chili powder
  • Salt and pepper to taste
  • Tortilla chips, for serving

Instructions

  1. In a large skillet, heat some oil over medium heat.

  2. Add the diced onion and jalapeno pepper to the skillet and cook until softened, about 5 minutes.

  3. Add the minced garlic and cook for another minute.

  4. Stir in the black beans, corn, diced tomatoes, cumin powder, and chili powder. Cook for 5 minutes, stirring occasionally.

  5. Remove from heat and stir in the chopped cilantro and lime juice. Season with salt and pepper to taste.

  6. Transfer the dip to a serving dish and serve with tortilla chips.
