How To Make Chef John’s French Fries

Fries don’t always have to be the regular, straight-cut potatoes. Not only are they the best go-to snack for many, but they also they pair excellently with other meals as a fun add-on. Have some not-so-ordinary fries with these best fries recipes.

Ingredients

  • 4 large russet potatoes
  • Vegetable oil, for frying
  • Salt, to taste

Instructions

  1. Preheat the oven to 200 degrees Fahrenheit.

  2. Peel and cut the potatoes into 1/4-inch thick fries.

  3. Rinse the potatoes under cold water to remove excess starch.

  4. Place the fries in a large bowl of cold water and let them soak for 30 minutes.

  5. Drain the fries and pat them dry with paper towels.

  6. Heat vegetable oil in a large pot or deep fryer to 325 degrees Fahrenheit.

  7. Fry the potatoes in small batches for about 5 minutes, until they are pale and soft but not brown.

  8. Remove the fries with a slotted spoon and transfer them to a wire rack set over a baking sheet.

  9. Increase the heat of the oil to 375 degrees Fahrenheit.

  10. Fry the potatoes again in small batches for about 3-4 minutes, until they are golden brown and crispy.

  11. Remove the fries from the oil and transfer them to the wire rack to drain excess oil.

  12. Season the fries with salt while they are still hot.

  13. Place the wire rack with the fries in the preheated oven to keep them warm and crisp.

  14. Serve the French fries immediately with your favorite dipping sauce. Enjoy!
