How To Make Chef John’s French Omelette Recipe

Ingredients
- 8 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp unsalted butter
- Optional fillings: shredded cheese, diced ham, chopped vegetables, herbs
Instructions

In a bowl, whisk together the eggs, milk, salt, and black pepper.

Heat a non-stick skillet over medium-low heat and add the butter, allowing it to melt and coat the pan.

Pour the egg mixture into the skillet and let it cook undisturbed for about 30 seconds.

Gently push the cooked edges towards the center while tilting the skillet to allow the uncooked eggs to flow onto the surface.

Add any desired fillings to one side of the omelette.

Using a spatula, fold the other side of the omelette over the fillings to create a half-moon shape.

Cook for another 1-2 minutes until the fillings are heated through and the eggs are fully cooked but still soft in the center.

Carefully slide the omelette onto a serving plate and cut into slices to serve.
