How To Make Baked Potato Skins with Brie & Truffle
For lazy dinners or family get-togethers, a serving of baked casserole can make your table spread even better. And who could say no to a dish that consists of layers of riced or shredded spuds, meat, and gooey cheese? Certainly not us—especially if it’s warm and fresh from the oven! So if you’re up to it, learn how to make this dish with the potato casserole recipes below. There are plenty of choices, from more classic cheese and potato combos to heartier meat dishes. You can even use sweet potatoes, too!

Ingredients
- 4 large potatoes
- 4 oz brie cheese, diced
- 2 tbsp truffle oil
- Salt and pepper, to taste
- Fresh chives, for garnish
Instructions

Preheat the oven to 400°F (200°C).

Scrub the potatoes and pat them dry.

Using a fork, prick holes all over the potatoes.

Place the potatoes directly on the oven rack and bake for 45 minutes, or until the skins are crispy and the insides are tender.

Remove the potatoes from the oven and let them cool slightly. Slice each potato in half lengthwise.

Use a spoon to scoop out the flesh from the potato halves, leaving a thin layer of potato in the skins. Reserve the flesh for another use.

Brush the inside and outside of the potato skins with truffle oil.

Place the potato skins back in the oven for an additional 10 minutes to crisp up.

Meanwhile, in a small bowl, mix together the diced brie cheese, salt, and pepper.

Remove the potato skins from the oven and divide the brie mixture evenly among them, pressing it into the skins.

Place the potato skins back in the oven for 5-7 minutes, or until the cheese is melted and bubbly.

Garnish with fresh chives and serve hot.
