Ingredients

  • 1 gallon of whole milk
  • 1 cup of plain white vinegar
  • 1 teaspoon of salt

Instructions

  1. In a large pot, heat the milk over medium heat until it reaches a temperature of 180°F. Stir occasionally to prevent burning.

  2. Remove the pot from heat and slowly add the vinegar, stirring gently. Let it sit undisturbed for 5 minutes.

  3. Line a colander with cheese cloth and place it over a large bowl or sink. Carefully pour the milk mixture into the colander, allowing the whey to drain away.

  4. Gather the corners of the cheese cloth and tie them together. Hang the cheese cloth bundle somewhere to allow the remaining whey to drain for about 1 hour.

  5. Once most of the whey has drained off, transfer the cheese to a bowl and gently stir in the salt.

  6. You can enjoy the cheese immediately or refrigerate it for a firmer texture.
