Ingredients

  • 4 slices of bread
  • 2 cups of nettle leaves, blanched and chopped
  • 1 cup of blue cheese, crumbled
  • 1/4 cup of butter
  • 1/4 cup of milk
  • 1 tablespoon of Worcestershire sauce
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a saucepan, melt the butter over medium heat. Add the blanched nettle leaves and cook until wilted, about 3-4 minutes.

  3. In a mixing bowl, combine the cooked nettle leaves, blue cheese, milk, Worcestershire sauce, and Dijon mustard. Season with salt and pepper to taste.

  4. Toast the slices of bread until lightly golden.

  5. Spread the nettle and blue cheese mixture evenly over the toasted bread slices.

  6. Place the prepared rarebits on a baking sheet and bake for 10-12 minutes, or until the cheese is melted and bubbly.
