Ingredients
- 8 large mushrooms, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of butter
- 1 tablespoon of all-purpose flour
- 1 cup of vegetable stock
- 1 tablespoon of Worcestershire sauce
- 1 teaspoon of thyme leaves
- Salt and pepper to taste
- 4 cups of mashed potatoes
Instructions

In a large skillet, melt the butter over medium heat. Add the onions and garlic, and cook until softened.

Add the mushrooms and cook until they release their liquid and start to brown. Remove half of the mushrooms and set aside.

Sprinkle the flour over the remaining mushrooms in the skillet and stir well to coat. Cook for 1-2 minutes to cook off the raw flour taste.

Gradually whisk in the vegetable stock, Worcestershire sauce, and thyme leaves. Continue cooking until the gravy thickens.

Stir in the reserved mushrooms and season with salt and pepper to taste. Keep warm.

Meanwhile, prepare the mashed potatoes according to your preferred method.

Serve the mushroom rarebit over a bed of mashed potatoes and top with the thyme gravy.
