Ingredients

  • 4 slices of crusty bread
  • 1 clove of garlic, halved
  • 2 tbsp olive oil
  • 1 cup of shredded mozzarella cheese
  • 1 cup of diced tomatoes
  • 1/4 cup of chopped fresh basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Rub the halved garlic clove over each slice of bread.

  3. Drizzle olive oil on both sides of the bread and place them on a baking sheet.

  4. Toast the bread slices in the oven for about 5 minutes, until golden brown.

  5. Remove the bread from the oven and sprinkle the shredded mozzarella cheese evenly over each slice.

  6. Return the bread to the oven and bake for another 3-5 minutes, until the cheese has melted and bubbly.

  7. Meanwhile, in a bowl, combine diced tomatoes, chopped basil, salt, and pepper.

  8. Remove the bread from the oven and top with the tomato mixture.

  9. Serve immediately and enjoy!
