How To Make Millet Salad Recipe

A delicious and healthy salad made with millet, colorful veggies, and zesty dressing.

Serves:

Ingredients

  • 1 cup millet
  • 2 cups water
  • 1/4 cup red onion, chopped
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup lemon juice
  • 2 tbsp olive oil
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Rinse millet and add to boiling water. Cook until tender, about 20 minutes. Drain and let cool.

  2. In a large mixing bowl, combine cooled millet, red onion, cucumber, cherry tomatoes, and parsley.

  3. In a small mixing bowl, whisk together lemon juice, olive oil, honey, salt, and pepper to make the dressing.

  4. Pour dressing over salad and toss well.

  5. Chill for at least 30 minutes before serving.
