How To Make Millet and Vegetable Soup

A warm and comforting soup packed with wholesome millet and nutritious vegetables.

Serves:

Ingredients

  • 1 cup millet
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.

  2. Add the onion and garlic and sauté until the onion is translucent.

  3. Add the carrots, celery, and red bell pepper and sauté for 5 minutes.

  4. Add the millet, vegetable broth, salt, and black pepper and bring to a boil.

  5. Reduce the heat to low and simmer for 20 minutes or until the millet is cooked and the vegetables are tender.

  6. Serve hot.
