How To Make Millet and Vegetable Stir-Fry

A nutritious and flavorful vegetarian stir-fry with millet and mixed vegetables.

Serves:

Ingredients

  • 1 cup of millet
  • 2 cups of water
  • 2 tbsp of olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 bell peppers, sliced
  • 2 carrots, sliced
  • 1 cup of green beans
  • 1 tsp of ginger powder
  • Salt and pepper to taste

Instructions

  1. In a pot, bring water to boil. Add millet, salt, and let it simmer for 20 minutes.

  2. In a large pan, heat olive oil over medium heat. Add onion and garlic and sauté until soft.

  3. Add bell peppers, carrots, and green beans to the pan and stir-fry for 10 minutes.

  4. Add cooked millet to the pan and stir-fry for an additional 5 minutes. Season with ginger powder, salt, and pepper.
