How To Make Millet and Chickpea Curry

This vegan curry is packed with protein, nutrients and flavors like cumin and coriander.

Serves:

Ingredients

  • 1 cup millet
  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric powder
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. In a large pot, heat the coconut oil and sauté the onion and garlic until softened.

  2. Add the cumin, coriander, and turmeric and stir well for 2 minutes.

  3. Mix in the millet, chickpeas, diced tomatoes and vegetable broth.

  4. Bring to a boil, reduce the heat and simmer for 30-35 minutes or until the millet is cooked and the curry is thickened.

  5. Add salt and pepper to taste and top with fresh cilantro.
