How To Make One Pan Spicy Rice

Ingredients
- 2 cups of rice
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 jalapeno pepper, seeds removed and diced
- 1 tsp of cumin
- 1 tsp of paprika
- 1/2 tsp of cayenne pepper
- 1 can of diced tomatoes
- 1 cup of vegetable broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions

In a large pan, heat some oil over medium heat. Add the diced onion, bell pepper, garlic, and jalapeno pepper. Cook until they are softened and fragrant.

Add the rice, cumin, paprika, and cayenne pepper to the pan. Stir well to coat the rice and spices.

Add the diced tomatoes and vegetable broth to the pan. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.

Remove the pan from the heat and let it sit, covered, for about 5 minutes.

Fluff the rice with a fork and season with salt and pepper to taste.
