Serves:

Ingredients

  • 2 tbsp butter
  • 2 onions, sliced
  • 2 cloves of garlic, minced
  • 1 tbsp fresh sage, chopped
  • 1 cup vegetable broth
  • 1 tbsp flour
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a large saucepan over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.

  2. Stir in the sage and cook for another minute.

  3. Sprinkle the flour over the onions and sage, and stir until it is well combined. Cook for 1-2 minutes to remove the raw flour taste.

  4. Slowly whisk in the vegetable broth, making sure there are no lumps. Bring the mixture to a simmer and cook for 10-15 minutes, until it thickens slightly.

  5. Use an immersion blender or transfer the mixture to a blender or food processor to puree until smooth.

  6. Season with salt and pepper to taste.

  7. Serve the sage and onion sauce warm with roasted meats or vegetables.
