How To Make Sage and Butternut Squash Soup Recipe
A comforting soup filled with the rich flavors of sage and butternut squash.

Ingredients
- 1 medium butternut squash, peeled and diced
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried sage
- 4 cups vegetable or chicken broth
- Salt and pepper, to taste
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until fragrant.

Add diced butternut squash and dried sage, and stir to combine. Cook for 5-10 minutes until squash is slightly softened.

Pour in vegetable or chicken broth, and bring to a boil. Reduce heat to a simmer and let cook for 25-30 minutes, until squash is fully cooked and tender.

Using an immersion blender, blend the soup until it is smooth. Alternately, you can carefully transfer the soup to a blender and puree until smooth.

Return soup to the pot and heat, stirring occasionally, until hot. Season with salt and pepper to taste.

Serve hot, garnished with a sprinkle of fresh chopped sage and a drizzle of olive oil, if desired.
