How To Make Saffron Chicken with Coriander Dip

Ingredients
- 4 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon saffron threads
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1/4 cup chopped fresh coriander
- Juice of 1 lemon
Instructions

Preheat the oven to 400°F (200°C). Season the chicken breasts with salt, pepper, and olive oil.

In a small bowl, soak the saffron threads in 2 tablespoons of warm water.

In another bowl, mix together the cumin, ground coriander, paprika, and a pinch of salt and pepper. Rub this spice mixture onto the chicken breasts.

Heat a grill pan over medium-high heat and grill the chicken breasts for 5-7 minutes on each side, until cooked through.

While the chicken is grilling, prepare the coriander dip by mixing together the Greek yogurt, chopped coriander, lemon juice, and the soaked saffron threads.
