Serves:

Ingredients

  • 250g chicken livers
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 sprig of thyme
  • 1/2 cup of butter, softened
  • 1/4 cup of heavy cream
  • Salt and pepper to taste
  • 1 apple, peeled and diced
  • 1/4 teaspoon of saffron threads
  • 2 tablespoons of sugar
  • 2 tablespoons of white wine vinegar
  • Toasted bread or crackers, for serving

Instructions

  1. Heat a tablespoon of butter in a pan and sauté the onion and garlic until translucent. Add the chicken livers and thyme, and cook until the livers are browned on the outside but still slightly pink on the inside.

  2. Remove from heat and remove the thyme sprig. Let it cool slightly.

  3. In a blender or food processor, blend the chicken livers, remaining butter, and heavy cream until smooth. Season with salt and pepper to taste.

  4. Divide the mixture into ramekins or small serving dishes and refrigerate for at least 2 hours, or until set.

  5. Meanwhile, make the apple and saffron chutney. In a small saucepan, combine the diced apple, saffron threads, sugar, and white wine vinegar. Cook over low heat for about 15 minutes, or until the apples are soft and the chutney has thickened. Let it cool.

  6. Serve the chicken liver parfait with the apple and saffron chutney and toasted bread or crackers.
