Ingredients

  • 8 medium-sized tomatoes, diced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onion and garlic, and sauté until translucent, about 5 minutes.

  3. Add the diced tomatoes, sugar, basil, oregano, salt, and black pepper. Stir well.

  4. Bring the mixture to a simmer and cook uncovered for 30-40 minutes, stirring occasionally.

  5. Use a potato masher or immersion blender to partially puree the tomatoes to the desired consistency.

  6. Continue to simmer for another 10-15 minutes until the sauce thickens slightly.

  7. Adjust the seasoning to taste.

  8. Serve hot as a side dish or over pasta.
